Have you tried contacting Sabin Rescue? They might have someone interested in doing it.

They do not have to be a practicing EMT, only have a current certification (According to my insurance company). We did contact Sabin but the track is located at a Glyndon fire address so the couldn't and Glyndon didn't seem to have much interest in it.
Hours would be 9 to approximately 6ish (whenever eliminations are over).

My last suggestion would be to contact FM Ambulance if you haven't already. They (used to anyway) keep an email list of recent students from their programs - maybe they'd be willing to send out an email for you.Unfortunately I let my certification and licensing lapse a couple years ago or I would do it.

Thanks for the help, I rounded up a few EMT. FM ambulance is kinda a last resort, they have been out here before and, as they claim, their only job is to be EMT's. I need someone willing to be my eyes at the big end of the track (were they are stationed) to give us a heads up if a car is lazy getting off track or in the field.
