order those gaskets tonight. get it done on monday. -
yup, you can get a turbo flange gasket for anything with a T25, which should mean anything with even a T2 series. 1985 to 1988 200sx turbos came with T2's on them. maybe they might stock a gasket for that. otherwise, 300ZXTT's, 1988 to 1989 30ZXT's and 2nd gen eclipses should be T2 series turbos.
on the timing, just adjust the CAS I beleive.
the brakes, I think there is a special procedure for bleeding ABS systems, look around online for that. I THINK you just have to unplug the ABS module and bleed it like that, not sure tho.
Id be interested in seeing your car somethime soon see what kind of a job they did on it. I have seen MANY SR20DET swapped 240sx';s, both S13 and S14's.

For all your 240 questions, hit up zilvia.net, freshalloy.com, or 240sx.org. Those forums are excellent sources of information. I think on zilvia they have a sr20det faq in the tech talk section. Heavythrottle.com has some good information too as well as tons of parts.
